Kids' Favourite Beet Applesauce

As we discussed in Monday's blog post about picky eaters, the challenge with many babies and toddlers is getting in their veggies! I swear my daughter can detect a hint of pureed pea in a tub of applesauce, so I was looking for a way to get her to really enjoy eating veggies. I took inspiration for this recipe from the Toddler Beet & Applesauce from Babyfoode.com (Great site!). I made it all in my slow cooker because I find it a lot easier with running after a baby, plus it makes the house smell amazing!
 
This recipe is suitable for a child 10+ months old.
 

Ingredients

  • 5 large apples (I used Pink Lady Apples as they're nice and large and went with my “pink” food theme.)
  • 1 large beet (can use half if you have a picky eater or want a more “pink” look)
  • 1/4 tsp clove
  • 1/8 tsp nutmeg
  • 2 tsp cinnamon (or 1 stick of cinnamon) 
  • 1/2 tsp fresh grated ginger
  • 1/3 cup water (if using slow cooker)
 

Directions

  1. Peel, core and cut apples in half. Peel and chop beets into smaller chunks.
  2. Put all the ingredients into a slow cooker, add 1/3 cup of water (may need to add more).
  3. Cook in slow cooker for 2 to 3 hours on high or 3 to 4 hours on low.
  4. Let cool for 10 minutes, put into a blender and blend until a smooth consistency.
  5. Let cool to room temperature before serving, or store in mason jars in the fridge for a week. Can be frozen as well!
