This summer, why not prepare something quick and easy for the family to eat before (or during) some fun activities?
This recipe for Dairy-Free Chicken Caesar Sandwiches is a healthier twist on a tasty favourite. The dressing would work well as a Caesar salad dressing, too!
What you will need to make 4 sandwiches:
4 barbecued chicken breasts
8 leaves of romaine lettuce
8 slices of bread (gluten-free or sprouted is best)
2 large tomatoes, sliced
1 cup sunflower sprouts
1 serving of caesar dressing (see recipe, below)
Caesar Dressing
1⁄2 cup macadamia nuts
1/4 cup pine nuts
3-5 Medjool dates (depends on how sweet you like it)
5 basil leaves
1 tbsp. nutritional yeast
3-4 thumb sized cloves of garlic
1/4 tsp. Himalayan salt
1/4 tsp. cracked black pepper (or more to taste)
1/4 cup water
4-5 lemons, juiced
Place all ingredients in a high-powered blender and blend until smooth.
Sandwich Assembly:
- Slice chicken breast into thin slices and toss with 1/3 cup of the Caesar dressing.
- Layer the tomato, romaine lettuce, sunflower sprouts and chicken on 4 slices of bread.
- Season with salt and pepper, and top with remaining slices of bread.
- Serve with a side salad made with fresh summer vegetables.
Yield: Makes 4 sandwiches.
