Baked Citrus Salmon

Who knew that salmon and grapefruit could create such a delicious pairing! Enjoy this salmon for lunch, dinner, or even as the protein in a salad. Fresh, delicious, and an excellent source of omega fatty acids!

 

 

Ingredients

4 fresh wild salmon fillets

¼ cup freshly squeezed lemon juice

2 tbsp. raw honey

2 cloves minced garlic

1 tbsp. grape seed oil

¼ tsp. salt

freshly ground pepper

1 large ruby red grapefruit sliced into rounds

 

Directions

  1. Preheat oven to 300 degrees.
  2. In a bowl, combine lemon juice, honey, garlic, oil, salt and pepper and stir well.
  3. Line a baking pan with parchment paper.
  4. Place fillets onto paper. Spoon and spread the sauce evenly over each salmon fillet.
  5. Top each salmon with one to two rounds of grapefruit.
  6. Cover and bake for 15-20 minutes, checking regularly to prevent overcooking.
  7. You can also grill the salmon on the BBQ!
