Who knew that salmon and grapefruit could create such a delicious pairing! Enjoy this salmon for lunch, dinner, or even as the protein in a salad. Fresh, delicious, and an excellent source of omega fatty acids!
Ingredients
4 fresh wild salmon fillets
¼ cup freshly squeezed lemon juice
2 tbsp. raw honey
2 cloves minced garlic
1 tbsp. grape seed oil
¼ tsp. salt
freshly ground pepper
1 large ruby red grapefruit sliced into rounds
Directions
- Preheat oven to 300 degrees.
- In a bowl, combine lemon juice, honey, garlic, oil, salt and pepper and stir well.
- Line a baking pan with parchment paper.
- Place fillets onto paper. Spoon and spread the sauce evenly over each salmon fillet.
- Top each salmon with one to two rounds of grapefruit.
- Cover and bake for 15-20 minutes, checking regularly to prevent overcooking.
- You can also grill the salmon on the BBQ!
