This simple Grain-Free Chickpea Tabouli can be served over greens, or to make a quick protein-packed snack! Parsley is high in antioxidants such as vitamins A, C, E and Selenium and is excellent for stimulating the digestive system.
I made this dish grain-free as grains are difficult to digest, especially for people experiencing issues with their gastro-intestinal system. Reducing the amount of grains in our diets can be beneficial for many people, and temporarily eliminating them altogether helps those of us who want to heal our gut.
Ingredients
2 cups cooked chickpeas
½ white onion
2 cups chopped parsley
¼ cup chopped mint leaves
2 ripe tomatoes, chopped
½ large cucumber, chopped
¼ cup sunflower seeds
2 tbsp olive oil
1 lemon, juiced
Sprinkle of Himalayan Salt
Directions
In a large bowl, mix together all ingredients. Store in the fridge up to 4 days.
