This recipe is a healthy take on a comfort food favourite. With whole vegetables providing fibre, minerals and vitamins and lean ground turkey for protein, it's a crowd pleaser. This recipe is a food prep Sunday must as it stores in the fridge up to a week for lunches, or freezes well for a nutrient dense last minute meal idea

Serves 4
Ingredients
- 1 tablespoon coconut oil
- 1 pound organic ground turkey breast
- 2 red or yellow peppers chopped
- 2 carrots chopped
- 1 large onion chopped
- 4 large garlic cloves minced
- 2 tablespoons chilli powder
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 28 oz BPA free can of diced tomatoes (Can always peel and dice fresh tomatoes instead for extra deliciousness and increased nutritional value)
- 2 cups organic chicken broth (can be homemade!)
- 1 8 oz BPA free can of tomato puree (can also be home made if you have the time)
- 2 small zucchini chopped
- dairy free cheese for topping (optional)
Directions
- In a large pot over medium-high heat, heat the coconut oil. Cook the turkey, peppers, carrots, and onions, stirring frequently until turkey is no longer pink.
- Add the garlic, chilli powder, cumin, oregano and salt. Cook, stirring constantly for another minute.
- Add diced tomatoes (with juice), chicken broth and tomato puree. Bring to a boil.
- Reduce heat to low, cover and simmer, stirring occasionally, for 30 minutes.
- Stir in the zucchini. Return to a simmer. Cover and simmer for 30 minutes, stirring occasionally, until vegetables are tender.
- Top with dairy free cheese, if using.
** This recipe can also be made in a slow cooker! Cook turkey over medium-high
heat and pour off any fat. Add to crock pot with all the other ingredients
(except the cheese) and cook on high for 2-4 hours or low for 6-8 hours.
