We all have those nights where we rush home after work and need to get dinner on the table ASAP! This Easy Week Night Dinner is perfect for when you need to take your children to games and practices or trying to make it to that 6:30pm spin class. And the best thing of all, easy clean up!
Tip: Make this as a double batch on a Sunday using 2 trays to have lots of left overs for the week.
Ingredients
- 4 chicken breasts cut into halves or thirds
- 3 large sweet potatoes scrubbed and diced into 1 inch cubes
- 4 cups roasting veggies (brussels, zucchini, carrots, beets, cauliflower)
- ¼ cup avocado oil
- Salt and pepper to taste
Spice Blend
- ½ tsp garlic powder
- ½ tsp cumin
- ½ tsp coriander
- 1 tsp smoked paprika
Add to a container and shake to mix.
Tip: Make this in a larger batch to keep in your pantry.
Directions
- Pre-heat oven to 400 degrees.
- Line a baking pan with parchment paper.
- Add the chicken to the pan, brush the pieces with oil and then sprinkle the spice mix on both sides.
- Add the veggies & cubed sweet potato to the tray and drizzle with the rest of the oil.
- Add salt and pepper to the tray as desired.
- Cook the tray for 40 minutes total, flipping everything half way through.
- Depending on the oven and the size of the chicken pieces, you may need to cook for an additional 10 minutes until veggies are tender and chicken is cooked through.
