1/2 cup chia seeds
2 1/2 cups unsweetened coconut or almond milk
1/2 organic lemon, juiced and rind grated
1/4 cup shredded coconut
3 tbsp maple syrup
1tsp vanilla extract
- Mix all ingredients together in a glass container and let sit in the fridge overnight.
- Simply scoop desired amount into small cups and serve for a snack or dessert!
- You can even top with your favourite fruit or nuts, if desired.
