It’s apple season! Growing up in Nova Scotia, apples were part of everything. We celebrated apple blossom festival in the spring and apple harvest in the fall. Nothing beats the smell of a cold cellar freshly stocked with hand picked apples. Apples are great on their own or baked into dishes such as this nutritious breakfast cereal.
Ingredients
- 1 cup quinoa
- 1 cup water
- 1 cup apple cider
- ½ tsp pure vanilla extract
- 1 tsp cinnamon
- 1 pinch nutmeg
- 1 apple cut into small cubes
- 2 tbsp chopped walnuts
Put the quinoa, apple cider, water, vanilla, cinnamon, and nutmeg into a medium pot and bring to a boil over medium heat. Add the cubed apple and reduce heat to medium-low. Simmer until the quinoa is tender and the liquid is completely absorbed, approx. 12 mins). Remove from heat and stir with a fork. Sprinkle with chopped walnuts and enjoy.
