Sneaky Chocolate Pumpkin Pudding

 

Sneaky Chocolate (and pumpkin) Pudding

 

If you are a parent to picky eaters, or are a selective eater yourself, this recipe is for you! This sneaky chocolate pudding keeps well in the fridge for up to 4 days … but I doubt it will last that long!
 
Pumpkin is an often overlooked but very healthy food. Rich in vitamin A, C, and containing some zinc, pumpkin in supportive for immune health. Pumpkin as also a high fibre food making it beneficial for digestive health. On top of all this, pumpkin is a potent source of antioxidants including zeaxanthin, which reduces the risk of eye disease. As you can see, pumpkins aren’t just for Halloween, they are just an incredibly nutritious food! 

 

Ingredients

2 cups unsweetened pumpkin puree (make your own when pumpkins are in season!)
½ - ¾ cup almond or coconut milk
5 tbsp. raw cacao
1/4 cup protein powder of choice
3 tbsp. pure maple syrup
2 tbsp. melted coconut oil
pinch sea salt
Optional: a sprinkle of shredded unsweetened coconut or dairy free chocolate chips

           

Instructions

  1. Place all the ingredients, except for the dairy free milk, in your blender.
  2. Blend until smooth, slowly adding in milk until desire consistency is reached. You may need to scrape down the sides.
  3. Chill for 2 hours or more to set the pudding.
  4. Serve sprinkled with a few dairy free chocolate chips and / or shredded unsweetened coconut.
